Avocado Traybake with Salmon and Hollandaise Sauce
This hearty dish combines the creamy richness of avocados with smoked salmon, potatoes, and a tangy hollandaise sauce. It’s the perfect meal for a chilly evening.

Ingredients
- 2 Avocados
- 3 Tbsp avocado oil
- 700g Waxy potatoes
- 1 Courgette
- 1 Red pointed pepper or bell pepper
- 200g Smoked salmon
- 100g Unsalted butter
- 1 Egg yolk
- 2 Tsp white wine vinegar
- 3 Tbsp coarsely chopped chervil, parsley, or dill
Method
- Preheat the oven to 200°C. Slice the potatoes, courgette, and pepper.
- Mix the vegetables with avocado oil and season. Spread on a baking sheet and bake for 25 minutes.
- Meanwhile, prepare the salmon and avocado slices.
- Make the hollandaise by blending melted butter with egg yolk and vinegar until thick. Season with salt and pepper.
- Remove the tray from the oven, add the avocado and salmon, and drizzle with hollandaise. Garnish with herbs and serve with extra sauce.

- 2 Avocados
- 8 Tbsp avocado oil
- 800g Pumpkin, cubed
- 3 Garlic cloves, finely chopped
- 6 Basil sprigs
- 1.4L Tomato passata
- 250g Lasagna sheets
- 1 Mozzarella ball
- Zest and juice of 1 lemon
- Dried chilli flakes, to taste
Method
- Preheat the oven to 220°C, toss pumpkin in avocado oil, and roast for 20 minutes.
- Sauté garlic with basil in avocado oil, add passata, and simmer.
- Assemble the lasagna by layering pumpkin sauce and lasagna sheets, finishing with mozzarella.
- Bake at 200°C for 25 minutes. Meanwhile, marinate diced avocados with lemon zest, juice, and avocado oil.
- Top the baked lasagna with marinated avocado and basil leaves.

- 2 Avocados
- 1 Red onion, sliced
- 200g Cooked chicken breast, diced
- 4 Sprigs flat parsley, chopped
- 8 Wheat tortillas

- 125g Grated cheddar
Method
- Spread salsa on four tortillas, top with avocado, onion, chicken, beans, and cheese. Season to taste.
