As Veganuary progresses, many participants seek ways to maintain the flavours and textures they love while adhering to a plant-based diet. This month-long challenge has gained immense popularity over the years, encouraging individuals to embrace a vegan diet for personal health, environmental benefits, and animal welfare. According to Veganuary.com, more than 2,100 new vegan products and menu options were introduced globally during Veganuary 2024, and this trend shows no signs of slowing down in 2025.

Despite the growing variety of vegan options, some participants find it challenging to replicate the flavours and textures of their favourite foods. This can leave some meat-eaters who are experimenting with plant-based eating longing for the tastes they are accustomed to. But Lily Keeling, a registered nutritionist with Green Chef, believes that following a vegan diet should be simple, enjoyable, and satisfying – whether for a month or a lifetime.

To make the transition smoother, Keeling has shared seven straightforward ingredient swaps that can help participants create delicious vegan meals without compromising on taste or texture. These alternatives are designed to suit a variety of dishes and ensure that plant-based eating remains exciting and fulfilling.

Swap pulled pork for jackfruit

Jackfruit is a tropical fruit known for its fibrous consistency, which closely resembles pulled pork. When cooked with the right spices and sauces, it becomes an excellent substitute in dishes like sandwiches and tacos. “Jackfruit is not only versatile but also low in calories and fat,” says Keeling. “It’s a great source of dietary fibre, which supports healthy digestion.” This swap is particularly popular in recipes that require a slow-cooked texture and bold flavours.

Swap ground beef for lentils

Lentils offer a hearty texture and rich, earthy flavour that can easily stand in for ground beef in a range of recipes. Whether you’re making bolognese, shepherd’s pie, or tacos, lentils can provide the satisfying bite you’re looking for. They’re also packed with protein and fibre, making them a nutritious addition to any vegan diet. “Lentils are incredibly adaptable and pair well with a variety of seasonings,” notes Keeling.

Swap fish for banana blossom

Banana blossom is an unusual but increasingly popular vegan substitute for fish. This tropical fruit has a flaky texture similar to white fish, making it ideal for recreating dishes like fish and chips or fish tacos. “Banana blossom’s neutral flavour allows it to absorb seasonings well,” explains Keeling. “It’s a fantastic option for those who miss the texture of fish.”

Swap butter for mashed avocado

Mashed avocado is a simple and nutritious alternative to butter. With its creamy, spreadable texture and mild flavour, it’s perfect for spreading on toast or using in baking recipes. Avocados are rich in healthy monounsaturated fats, which support heart health, and they’re a source of essential vitamins and minerals. This swap not only enhances the nutritional profile of your meals but also adds a fresh and vibrant element.

Swap ground meat for mushrooms

Finely chopped mushrooms deliver a savoury, umami-rich taste that works well as a replacement for ground meat in a variety of dishes. From burgers and meatballs to taco fillings, mushrooms can convincingly mimic the texture and flavour of meat when seasoned properly. “Mushrooms are a great source of antioxidants and B vitamins, making them a valuable addition to a plant-based diet,” says Keeling.

Swap honey for agave nectar.

Agave nectar provides a similar sweetness and consistency to honey, making it an ideal plant-based substitute for use in teas, baking, and dressings. Derived from the agave plant, this natural sweetener has a lower glycaemic index than honey, which may help in managing blood sugar levels. “Agave nectar is a fantastic way to achieve the sweetness you’re looking for without relying on animal products,” Keeling explains.

Swap bacon for tempeh

Tempeh, made from fermented soybeans, is an excellent alternative to bacon. It has a firm texture and can absorb smoky flavours, making it a suitable addition to breakfasts, sandwiches, and salads. “Tempeh is packed with protein and contains probiotics, which support gut health,” Keeling notes. “It’s also rich in iron and calcium, essential nutrients for maintaining overall health.”
