The World Avocado Organisation (WAO) is celebrating spring 2025 with a campaign highlighting avocados as a seasonal superfood, branded as Fresh, Fabulous, and Full of Flavour. As warmer days arrive, the organisation is encouraging UK consumers to embrace avocados for their versatility, nutritional benefits, and vibrant taste. Collaborating with food influencers, the WAO has curated a collection of recipes designed to elevate spring menus with healthy, avocado-focused dishes.

Avocados are renowned for their smooth, mild flavour and health benefits. Rich in vitamins, minerals, and heart-healthy monounsaturated fats, they can help lower LDL cholesterol levels, reducing the risk of heart-related illnesses. This makes them an ideal ingredient for maintaining vitality during active spring days. Additionally, avocados are a significant source of fibre, aiding digestion and promoting sustained energy levels, which is particularly beneficial as schedules fill with outdoor activities.

To showcase avocados’ culinary potential, the WAO has partnered with influencers to create recipes that blend nutrition with bold flavours. Below are three standout dishes, each serving two people, complete with detailed methods and ingredients as shared by the WAO.

Avocado and Salmon Tortilla Rolls

  • Ingredients: 2 avocados, 2 salmon fillets, 4 small tortillas, 1 tbsp spicy mayo (vegan/dairy-free option available), 2 tbsp soy sauce, 2 limes, coriander, spring onion, and sesame seeds for garnish.
  • Method: Cube salmon and marinate in lime juice, mayo, and soy sauce for 15 minutes. Fry tortillas in neutral oil. Slice avocados and place on tortillas, top with salmon mixture, and garnish with coriander, spring onion, and sesame seeds.

Gnocchi with Creamy Avocado Sauce

  • Ingredients: 400g gnocchi, olive oil, halved cocktail tomatoes, 1 avocado, 200ml vegan cooking cream, fresh spinach, basil, half a lemon, 2 tbsp yeast flakes, salt, pepper, garlic cloves, sautéed pine nuts, and fresh basil for topping.

  • Ingredients: 2 sweet potatoes, 2 tbsp olive oil, 1 tsp garlic powder, 1 tsp smoked paprika, ½ tsp cumin, salt, pepper, 2 avocados, 2–4 tbsp Skyr or yogurt, juice of 1 lemon, ½ tsp chili powder, ½ tsp garlic powder, ½ tsp cumin, 2 soft-boiled eggs, 50g crumbled feta, pomegranate seeds, parsley, pistachios, optional chili flakes.
  • Method: Preheat oven to 200°C. Cut sweet potatoes into fries, toss with oil and spices, and bake for 30 minutes, flipping halfway. Blend avocado, yogurt, lemon juice, and spices for the dip. Boil eggs for 5–6 minutes, cool, and peel. Spread dip on a plate, top with fries, eggs, feta, pomegranate seeds, parsley, pistachios, and optional chili flakes.
